A dry and powerful wine with oxidative aromas of nuts, obtained from the local Savagnin grape variety, our Vin Jaune is made from old vines from the 1950s with low yields and aged for nearly 7 years in oak barrels without topping up – an operation usually consisting of compensating for the share of the angels in the barrel by regularly topping up the wine’s level. It is this absence of topping up that reveals a veil of characteristic natural yeasts, giving the wine a unique flavor of nuts (walnuts) and tender spices.
This is the flagship of the Arlay estate, the one that deserves a ranking among the greatest vintages in the world. A dry and powerful wine with nutty aromas, the vin jaune is obtained from the Savagnin grape variety alone, aged for nearly 7 years in barrels, left to drain by natural evaporation, without topping up, racking or sulfiting, under a veil of indigenous yeasts, without the addition of selected yeasts. A natural process that guarantees a pure wine, without rancio or alcohol notes. The richness and complexity of the aromas, the persistence of the bouquet, the absence of rustic notes, all contribute here to the expression of the highest quality of the vin jaune. It results in particular from the great rigor in the choice of barrels to compose the final wine. The bottle, called Clavelin, is of a unique shape in the world; it contains 62 centilitres.
